1. The journey from farm to roaster gives mould its chance
After coffee is picked, it has to dry. If rain slows the drying, mould can grow on the beans and make toxins. The beans can get damp again later, in warehouses and shipping containers, which gives mould another chance. That's why we follow strict protocols to guard against it. We buy speciality-grade beans. We keep them in climate-controlled storage until we roast. An independent lab tested a sample of ours for mould and mould toxins, and every result passed.

2. Worldwide, over half the coffee tested carried a mould toxin you can't see or taste
Two global reviews found ochratoxin A in 53% and 58% of samples. Showing up isn't the same as breaking the UK limit. The World Health Organization says its most notable effect, seen in animal studies, is kidney damage. In those studies, as the kidneys worked to clear the toxin from the blood, it built up in the cells doing that job and harmed them. Roasters don't have to check for it, so we had ours measured.

International food-safety guidance says the black and sour defects carry the highest levels of this toxin, and lower-priced coffee is allowed more of them. 4. Chemical pesticides are potentially toxic. How much is in your coffee?
Large coffee estates spray their crops to mass-produce, and chemical residues can stay on the beans. The World Health Organization warns that pesticides can affect short- and long-term health. We screened ours for 600+ of them, and every result came back within its legal limit.
